So many cupcakes, so little time D:
but at any rate, I decided on red velvet for my youth group's bake sale last sunday, and red velvet is what i made :)
as the saying goes, "april showers bring may flowers", and although all hong kong weather has brought me so far in may is an insane amount of rain, i went for rose water buttercream, which i threw in some chopped up rose petals to add al little more floral flavor and aroma to the frosting.

(apologies for my terribawful photography)
I completely just ditched the piping nozzles in favor of piping out a large, fluffy swirl of pale pink frosting and just stuck a candied rose petal on it. Simple decoration, similar color theme. Red and pink. this may as well have been for valentine's day.
I tripled the recipe to make enough to sell, so if you're baking for a large crowd, double or triple that recipe below :)
For my red velvet cupcake recipe, i went for my all-time favorite youtube food channel's recipe, (check them out after the jump) and the only modification i made was substituting the buttermilk for plain yogurt, which made the cake itself, compared to my last attempt, more moist, accompanied with more sponginess. Always a good thing, no?
Recipe after the jump :)
oh and i put in less red food coloring than called for. the amount i added covered the batter and made it bright red. and extra cocoa powder because i like my red velvet cupcakes more chocolate-y.
