another late. again. whoops. and yes. another risotto recipe. i'd apologize for loving risotto so much, but i don't regret anything, sooooo i guess you wont be getting an apology after all. sorry not sorry.
anyway, i essentially used the same basic recipe as last time, except this time with chicken broth and no alcohol. the replacement is quite simple- you simply replace the amount of alcohol you would have used with the same amount of broth.
there's nothing too complicated about this recipe, as risotto is usually quite straightforward. the only thing special about this recipe is the dried apricots i chopped up loosely and mixed into the risotto after the cheese. i would have loved some fresh mint leaves to mix into the risotto and garnish it with, but alas, the supermarket ran out, and hong kongers simply don't have mint plants sitting around the house ( or at least, we don't have any yet).

i served the risotto alongside a simple salmon steak my dad likes to whip up. it's very quick, and takes almost zero effort. you simply take a salmon steak and rub a small amount of salt and dried dill in, and fry off in a pan until it's cooked. We use a toaster oven instead of frying it off, and it makes the process even easier; we simply pop the steaks, two at a time, into the oven for about 15 mins and viola! dinner is halfway taken care of.

Ingredientsyields 4-5 servings, depending on your serving size 2-4 cloves of garlic, crushed (preference) 2-4 shallots or 1/2 an onion, diced (preference) 1 1/2 cup arborio rice 200-300ml white wine (optional) around 600-1,000ml broth (vegetable or chicken work best; the amount you need will vary) 1 cup mushrooms, sliced stems of your sliced mushrooms, diced (optional) 1/2 cup dried apricots, cut into coarse chunks some pepper, to taste (optional) some dried or fresh diced oregano some dried or fresh diced thyme 2 cups grated parmesan or mild white cheddar some oil, so nothing sticks to your pan (prefered amounts; I used olive oil) | Ready to cook?
