roses are one of the most poplar flowers to cook and decorate with, and with a rose water buttercream going on my red velvet cupcakes, i may as well go the extra mile and top those babies with actual rose petals.
after some research and image browsing, i went with an egg wash for the petals, and since i didn't want sugar crystals on my petals to weigh them down, i used icing sugar instead.

i started with four nice, fresh roses in peach and red, and pulled the petals off gently. i then rinsed them in warm water and dunked them into a bowl of cold water.
(if you ever wondered what roses looked like without petals... that's how)
i then placed them with some space apart on a clean drying towel and put another one on top to pat them dry.
I then beat an egg white with water and dipped each petal into the mixture, then using clean fingers to brush off all the excess mixture. i then placed them on a plate lined with wax paper to dry off a bit. i then sifted icing sugar onto the petals, and after three minutes, flipped them over and sifted icing sugar on the other side of the petals.
i placed them in he fridge overnight, and flipped them over in the morning and left them to dry again in the fridge until using them that night.
